This year, CCE Nutrition Educator Maryann Birmingham will be conducting a series of two-level workshops, Beginner & Advanced. These workshops align with current research-tested guidance from USDA, The National Center for Home Food Preservation and the Centers for Disease Control.
April 18, 2026 • BEGINNER CLASS:
Water-bath fundamentals & Strawberry Jam
- Skills: Jar prep, headspace, pectin & gel tests; labeling & storage
April 25, 2026 • ADVANCED CLASS:
Advanced Water-bath: Tomato Sauce (w/added acid) + Chutney or Relish (to be determined day of workshop).
- Skills: Viscosity control, density & safe recipe changes
MAY 16, 2026 • BEGINNER CLASS:
Hot-pack fruit: Peach/Pear Slices
- Skills: Hot vs. Raw pack, syrup strengths & liquid evaporation
MAY 30, 2026 • ADVANCED CLASS:
PRESSURE CANNING WORKSHOP: chicken-cubed and/or broth
- Skills: Venting 10 minutes, locking & pressurization, altitude adjustments, cooling, gauge, testing, jar size/time/packing style
JUNE 6, 2026 • BEGINNER CLASS:
Applesauce + Fruit butter demo
- • Skills: Texture control, foam control, spoilage signs
JUNE 13, 2026 • ADVANCED CLASS:
Pressure Canning Vegetables; Carrots and/or Green Beans
- Skills: Packing liquids; timing resets if pressure drops
